We all get cravings for Mexican food every now and then; it’s so delicious, how can we not? The G&T team’s appetite was so strong for Mexican that we created our own nutritional cure; introducing the new Taco Salad! We wanted to shake things up with our menu so we decided to create this fun and tasty salad that anyone would enjoy. Made with our own vegan taco meat on top of delicious leafy greens and veggies, this salad is flying off the shelves.
The Taco Salad is made up of romaine lettuce, carrots, purple cabbage, scallions, grape tomatoes, taco walnut lentil “meat” and topped off with a cashew cilantro dressing. The taco “meat” is a mixture of walnuts, extra virgin olive oil, taco seasoning, salt, and black lentils. Not only is this salad gluten/ dairy/ soy free, but it’s full of nutrients.
- Walnuts: The first core ingredient to our taco meat, these nuts are rich in omega- 3 fats and contain higher amounts of antioxidants than most other foods. Eating walnuts may improve brain health while also helping to prevent heart disease and cancer.
- Lentils: The second core ingredient to our taco meat, lentils are an excellent source of cholesterol- lowering fiber, plant based protein, and B- vitamins. Lentils are also known to help regulate sugar and promote cardiovascular health.
- Apple Cider Vinegar: Found in the cashew cilantro dressing, this vinegar is organic and contains strains of proteins, enzymes, and friendly bacteria which give the product a murky looking appearance. The acetic acid in the vinegar is anti- microbial and kills unhealthy bacteria. It is a great digestive aid.
- Cilantro: Also found in the dressing of the taco salad, cilantro is highly effective at detoxifying heavy metals from the body.
