Marinated Kale Salad

PILE YOUR PLATE WITH HEALTHY DARK LEAFY GREEN. Kale, which boasts a cool 45 favonoids (plant pigments that promote antioxidant activity in the body), helps lower cholesterol as effectively as some prescription drugs.

The trick to getting kale delicious is to make it wonderfully soft and tender, which we do by tossing the leaves with our Flax Honey Dijon dressing. This breaks down the cell wall of the kale, allowing it to wilt, absorb all the incredible flavors and become insanely good. Then, we mix these greens with red cabbage, roasted beets and carrots, fennel pumpkin seeds, sea salt and pepper. This not only adds some crunch, but the rainbow of colors from the other vegetables creates a beautiful dish. This salad is so nutrient dense it could called “the anti-aging salad.”

Kale is such an awesome superfood, so each bite will have you glowing from the inside out, while also making your taste buds very happy.
